Singing Carrot Cake – recipe

dry ingredients

  • 9 oz plain flour
  • 3 oz dessicated coconut
  • 1 teaspoon bicarb soda
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • pinch salt

wet ingredients

  • 11 oz grated carrot
  • 6 fluid oz oil
  • 3 fluid oz soured cream
  • 3 eggs
  • 2 teaspoons vanilla essence
  • 6 oz muscovado sugar
  • 6 oz soft brown sugar

Mix the 2 sets of ingredients separately making sure the sugars are dissolved.

Combine the two mixtures.

Turn into two lined 2lb loaf tins

Bake @ 130°C for 1½ hours.

Can be frozen.
